Sea Bass & Sea Bream

Sea bass is an excellent source of protein, and essential omega-3 fatty acids, while sea bream is higher in fat content than other white fish, a valuable source of omega-3 fats.

A few words about Chef Vasilios Sarellas

After serving in the army as a military cook, Chef Vasilios Sarellas earned the culinary certificate, “Best of International of Alain Ducasse Creations en Patisserie”, from Alain Ducasse Education. From then on, he has broadened his experience working on various projects and alongside some reputable chefs, namely: as a cusieniere in Paul Bocuse’s L’ouest restaurant in France, with executive Chef Christophe Muller (3 Michelin stars and Mof) in the exclusive event at L’ouest and for a number of established restaurants in Athens. Vasilios runs his private cooking company for luxury villas and yachts in Mykonos for exclusive clientele during the summer.

Chef  Vasilios Sarellas cooks Sea bream with pistachio crumble
Persons 2-3 pers.

INGREDIENTS

  • 4 sea Bream fillets
  • For the crumble:
  • 100gr Aegina pistachio nuts
  • 70gr bread rusk
  • 1 garlic clove
  • 100gr parsley
  • 1 table spoon greek olive oil
  • salt and pepper
  • For the garnish:
  • 2-3 medium size courgettes
  • 1 garlic clove
  • olive oil and lemon
  • salt and pepper

DIRECTIONS

Take all the ingredients for the crumble and chop finely in the blender.

Take the sea Bream fillet and place it in a pan skin down with a touch of olive oil.

Add the crumble on top and bake it in the oven at 1800C for 12 to 15 minutes.

Slice the courgettes in strips and add finely grated garlic with a touch of olive oil, salt and pepper. Steam it for 4 minutes. Mix the olive oil and the lemon juice

To serve, place the steamed courgettes on a plate, the fillet with the crumble on top and sprinkle over the sauce of olive oil and lemon. Some finely chopped spring onions along with some chili flakes add extra aroma to the plate.
